2011 is the last Harvest of Jean-Guy and Jacques Jacquinot the 2 cofounder of the brand. The colour is of a very nice hue a deep gold straw colour. It is a shining gold and very luminous. The tiny bubbles stream is persistent and intense. It is creating a nice delicate “cordon” which stays for a long time.
Tasting Note:
Nose is very pleasant and charming. At beginning we find citrus notes followed of candied and cooked pears. It is very discreet and closed even with the great age. After few minutes the bouquet explodes: with tobacco, coffee, dry fruits, star anise, liquorice, acacia flowers, woody, toasted and roasted flavours, brioche, honey, and barrel maturation.
The mouth feel is still crispy with The very nice acidity which shows the minerality keeping a watery and salty sensation. The after taste of caramel, candied orange with chocolate and woody notes is persistent.
Ideal for special and exceptional apperitive along “comté gougères”, smoked salmon, foie gras. With its nice body it can afford a lamb shop square with garlic and rosemary crust and a beautiful cheese plater.
Grapes: It is a blend of 80 % of Chardonnay and 20 % of Pinot Noir.
