Background: Created in 1964, Maison Pierre GRUBER has been the cornerstone of Domaine Jean-Luc & Paul Aegerter’s Burgundian activities since 1988.
Winemaking: After being hand-harvested, the grapes are put into stainless steel tanks for pre-fermentation maceration for 2 to 4 days. Then, alcoholic fermentation is begun using nothing but natural starters. Malolactic fermentation and ageing take place in oak barrels for 8 to 12 months. A dazzling, bright scarlet robe that presages aromas of black fruit (blackcurrant and blackberry), red fruit (cherry and redcurrant), humus and undergrowth. And with age, truffle, leather and spices. Young, this wine offers the palate the crisp charm of fresh grapes. Firm, frank and sappy, it then develops to show itself to be very well structured and generous. The fleshy texture of this Beaune Premier Cru predestines it to strong tasting meat, such a roast of braised game. This theme is carried through into cheese, where it isideal with distinctive flavours such as Epoisses, Soumaintrain, Munster and Maroilles.
