Winemaking: As soon as it arrives in the cellar, the entire harvest is pressed in order to obtain better drainage of the juice. Then, the juices are refrigerated for 24 hours before settling. They are then barreled for fermentation with native yeasts. The must will finally mature for 4 months in stainless steel vats.

Grapes: 60% Viognier, 40% Chardonnay

Tasting note: The cuvée, À l'Orée du Bois, is a blended wine composed of 60% Viognier and 40% Chardonnay. Very aromatic on the nose, it develops floral and citrus notes. Full on the palate and with a lovely freshness, it finishes with delicious lemony notes.

Food Pairing: À l'Orée du Bois will be the ideal white wine for an aperitif.
