Wine-making:
After being hand-harvested, the grapes are put into stainless steel tanks for pre-fermentation maceration for 2 to 4 days. Then, alcoholic fermentation is begun using nothing but natural starters. Malolactic fermentation and ageing take place in oak barrels for 8 to 12 months.
Tasting Note:
A dazzling, bright scarlet robe that presages aromas of black fruit (blackcurrant and blackberry), red fruit (cherry and redcurrant), humus and undergrowth. And with age, truffle, leather and spices. Young, this wine offers the palate the crisp charm of fresh grapes. Firm, frank and sappy, it then develops to show itself to be very well structured and generous.
